Making the Perfect cup of Sencha Tea

When serving Sencha Green tea, temperature plays an important role. Never pour boiling water straight onto the tea leaves, this will make the tea slightly bitter. There are several ways to get around this, we have seen a Japanese person place boiling water into a cup, transfer the water to another cup, then finally pour the water onto the tea leaves. The way we like to pour our tea, is to just cover the tea leaves with cold water then top up with the boiling water. How ever you like to make your tea it is important to have the water temperature at around 70 degrees to achieve a great tasting tea.
